Black Bean Dip
Black Bean Salsa

Black Bean Dip

¼ small onion
1 15-ounce can black beans, drained and rinsed
2 tablespoons fresh limejuice
2 tablespoons orange juice
2 cloves garlic, minced
¼ teaspoon freshly ground pepper

Process or blend onion until chopped. Add remaining ingredients. Blend or pulse the processor until blended. Stop to scrape down the sides until all is blended.

Good with vegetables, chips or crackers.

Black Bean Salsa

1 15-ounce can black beans, rinsed and drained
1 cup cucumbers, seeded and diced
1 medium tomato, peeled, seeded and diced
½ cup sliced green onions
1 serrano chili pepper, seeded and diced
¼ cup fresh cilantro, chopped
¼ cup fresh lime juice
¼ cup oil
1 teaspoon salt
½ teaspoon cumin

Mix together. Yum with chips.

(Be warned – wear gloves when working with serrano peppers, if possible. The oil in the pepper stays on hands forever and can sting!! It’s deceiving, green, not red and it does not smell strong, but if it gets on your fingers, it’s staying!)
